BBQue Cucumber Relish

Indispensable for every BBQue: This relish has it all! Made from finely diced cucumbers with a refreshing taste of red pepper, dill, tarragon and mild apple cider vinegar, it gives all conceivable grilled dishes that special touch of spice and freshness. The steak would be the classic here, but grilled prawns or fish also win here. It is also ideal as a topping for roast beef sandwiches and as an accompaniment to pink roast beef with fried potatoes. You can also quickly make a lean, flavorful tartar sauce: simply stir together 1 part mayonnaise, 1 part plain yogurt, and 2 parts cucumber relish, and you're done!
