Château Phelan Segur 2006, Cru Bourgeois Supérieur is one of the most stylistically typical of the château. It shows a deep purple color and a wonderful aroma of blueberries, black cherries and dark plum flesh. The medium-heavy wine, with admirable fullness and finesse, has soft tannins, good substance and a wonderfully long finish. The 2006, here in half a bottle, is fully mature and in a beautiful phase of maturity. Wonderful for a midday lunch, or maybe you want to try several wines side by side. Half a bottle is a good choice here.

Rack of lamb with olive tapenade, rosemary jus and green beans or beef cheeks in red wine with carrots and onions. Also excellent calf's liver with apple onion sauce.
Choice of cheeses: Bleu des Causses, Bleu d'Auvergne, Epoisses or Cantal
